Over the course of the day, we prepare 7–8 traditional dishes, enjoy DOC wines served throughout, and gather for a long table meal beneath a canopy of grapevines. The class takes place just outside Tropea in the countryside, where vineyards, olive groves, fruit trees, and gardens provide many of the ingredients used during the day. Cooking is done in a rustic open-air kitchen, shaded and surrounded by nature. Together we prepare a variety of traditional Calabrian dishes: fresh seafood caught along the coast, meats from the surrounding hills, seasonal vegetables from the garden, and the region’s signature pasta, fileja, rolled by hand and served with a selection of sauces. Each dish reflects centuries of tradition, passed down through generations and rooted in Calabria’s unique terroir.
The class is guided but relaxed, giving everyone the chance to cook, learn, and taste at their own pace. Throughout, you’ll enjoy endless DOC wines accompanied by farm antipasti — salami, cheeses, and olives — making the cooking itself as convivial as the dining.
Exploring the Farm and Its Produce
During the day, we walk through the property, where you can see the seasonal vegetables growing in the gardens, vineyards climbing the hills, and olive trees that yield the oil used in the class. Fruit trees are scattered across the land, adding to the sense of abundance. The farm also produces its own salami, honey, and olive oil, connecting each part of the experience to its source.

When the cooking is complete, the day turns into a true Calabrian banquet. We sit at a generous countryside table beneath the grapevines, where the dishes prepared together are served in abundance: two handmade pasta dishes, seafood, meats, and seasonal vegetable creations.
The meal is long and unhurried, accompanied by DOC wines and followed by a homemade dessert. To close, coffee and the farm’s own liqueurs are shared, completing the day in true Calabrian style.
